Deep ruby red.
nose
A vibrant nose of dark berries, mocha and thyme.
palate
A medium bodied pinot, showing flavours of Maraschino cherries, plums and crushed herbs. The fine tannins and ripe fruit flavours combine with subtle oak to give a velvety mouth feel and long delicate finish.
comments
Harvest commenced late March in our Bendigo vineyard. After arriving to the winery the grapes were gently destemmed allowing whole berries to remain intact. After a 5 day cold soak the fermentations commenced with a combination of wild and cultured yeast. Each batch was hand plunged to extract the vibrant colour, flavour and delicate tannin structure. Each parcel was then pressed separately to a mix of new and used French oak barrels or remained in tank. In the spring after completing Malolactic fermentation each parcel and tank was tasted and blended.

This single vineyard wine was sourced from Mud House’s Estate vineyard in the Bendigo region of Central Otago.

maturation
Parcels of this wine were matured in new and used French oak barrels for up to 12 months. Other parcels remained in stainless steel tanks to retain the vibrant fruit characters.
