comments
After arriving at the winery the grapes were gently destemed to open fermenters. After a five day cold soak the fermentation was started with a mix of wild and cultured yeast. The grapes were hand plunged or pumped over twice a day to extract the colour, flavour and tannin structure. After pressing, each parcel was kept separate for maturation.
